THE Crolly Distillery has unveiled its latest ultra-premium Irish whiskey with the launch of Croithlí Oloroso Single Cask.
This limited-edition release continues the Donegal distillery’s commitment to producing distinctive, direct fire double distilled single malt whiskeys.
It follows the success of the distillery’s acclaimed PX Single Cask and further strengthens Croithlí’s growing reputation for producing premium Irish whiskeys in limited quantities.
Limited to just 1,500 individually numbered bottles, Oloroso Single Cask has been fully matured in European oak ex-Oloroso Sherry hogshead casks from the renowned Juan Pino Cooperage in Córdoba, Spain.
The casks were seasoned for two years with Oloroso sherry before arriving in Donegal, where they matured Croithlí’s distinctive direct fire spirit.
The result is a luxurious, full-bodied Irish single malt with layers of dried fruit, warming spice, toasted oak and creamy sweetness, complemented by the subtle texture and depth that have become hallmarks of Croithlí’s traditional direct fire distillation process.

Never-before-seen Winston Churchill documents stating his lifestyle habits as “whiskey and champagne” have fetched £10,000 at auction.
The wartime PM’s life insurance proposal, which was made in 1913 when he was 39-years-old, came to light recently after nearly 70 years.
When declaring his medical history, he revealed his boozy appetite and said his habits were “whisky and champagne at meals – nothing between”.
The insurance documents formed part of a selection of historic artefacts which were kept in storage for decades in a war bunker underneath Goode Street in London.
Other rare paperwork related to his burglary claim in March 1959 following a break-in at his Hyde Park home and revealed the suspects who were under suspicion.
Intruders gained access to the London residence via an unsecured attic window and ransacked the upper-floor bedrooms while Sir Winston and Lady Churchill were away.
The crime was never solved.
The documents reveal the stolen valuables – including jewellery, fur coats and even Sir Winston’s famous cigars – and their total value as being £25,000.
They went under the hammer at Special Auction Services in Newbury, Berks., on July 7 where the collection was divided among three UK buyers and one from Switzerland following bids from across the world.
SAS director Thomas Forrester said: “It was amazing to see such huge interest in these pieces.
“The worldwide bids showed the appeal of Churchill as well as the unique nature of these lots.
“These insurance documents were a previously unseen snapshot in time but now will be enjoyed by the wider public rather than being locked away in an archive.
“They were locked away in a war bunker underneath Goodge Street in London for at least 30 years.
“They provide a fascinating insight into Churchill’s lifestyle and a time when life just appeared a little bit more interesting.
“Imagine telling your GP now your diet is whisky and champagne, you’d probably get a good telling off.
“They reveal how the great man was really quite human.”
The files shed further light on the details of the crime, the suspects and the subsequent police investigation with a further letter from Alliance Assurance confirming to Sir Winston that no culprits were ever caught.
They also detail the guilt the couple’s butler felt at having left the property unlocked and how police at one point suspected the new housemaid’s fiancé.
Another note reveals police had no joy interviewing neighbours as “those people who were not away apparently all having spent most of the evening watching television programmes.”
Insurers also state how the only people home at the “two rather large adjoining semi-detached residencies” were their butler, housemaid and temporary cook.
One letter adds: “At the moment the Police have no clue concerning the identity of the thief or thieves.
“Lady Churchill and the Secretaries have stated that references are thoroughly checked before servants are engaged…the integrity of none of them is we gather in question.
“Lady Churchill herself knows the housemaid’s fiancé and nothing is known against him.
“Up to the present therefore there would seem to be no reason to think that any of the servants are implicated.
“The butler was obviously very upset at the occurrence and probably had some feeling of guilt in that it was he that was responsible for leaving the house entirely unoccupied.
“On balance neither we nor the police are of the opinion the crime was planned or that the thief or thieves knew that it was Sir Winston’s house being entered.
“The probability is that the thieves would not attempt to enter the house as they would naturally suppose it would always be occupied and would also be aware it was under police protection.”
A further note reads: “Despite exhaustive investigations by the police officers concerned, very extensive publicity including publishing of photographs of the missing jewellery, etc, and the advertisement of a reward of £1,000, there have been no developments likely to lead to the identification of the thief or thieves or any recovery of the stolen property.
“We fear that the prospect of any such recovery is now remote.”
Mr Forrester added: “I think if the burglary happened today then maybe the butler might have come under more suspicion – but the crime was never solved.
“The level of detail is astonishing as the documents talk about possible suspects and the value of all the items stolen.”
Churchill’s burglary claim had an estimate of £400-600 and sold for £3,200 while his life insurance proposal was expected to make £200-300 but sold for £2,600.
His unsigned mortgage application for £25,000 and interest to buy Chartwell Farm, Parkside Farm and Bardogs in Kent, was also in the sale and fetched £1,200.

Forget Drinking Scotch Whisky Neat — Why Mixers Aren't Off-Limits
Scotch whisky, more than any other spirit, is likely to end up in a glass all on its own. There is an unwritten rule that a dram of whisky ought to be taken room temperature and straight from the bottle, with perhaps a scant few drops of water added to soften the burn and reveal deeper complexity. While this practice gives a purer tasting experience for those who want to really explore an exceptional bottle, Scotch does also make an excellent cocktail. To debunk this common Scotch whisky myth — among others — Tasting Table's James Hastings, a former cocktail bartender, sat down with Annabel Thomas, founder and CEO of Nc'nean, a distillery on the west coast of Scotland.
"While many Scotch enthusiasts prefer their whisky neat," Thomas says, "there's no hard rule." This shows up at the Nc'nean distillery, where the brand's whiskies are mixed freely and well. The simplest of the cocktails served there is the Whisky Six, a Scotch and soda tipple featuring two parts Nc'nean to four parts soda water, with a sprig of mint to garnish the drink. Just like adding a splash of water to a glass of neat Scotch, Thomas explains that the soda softens and opens up the flavor of the whisky, increasing the perception of a wider array of flavor compounds.
Even with a good bottle of Scotch, however, there is more to mixing than just opening up the spirit. "I can attest that there are plenty of superb Scotch-based cocktails out there that wouldn't exist if this particular myth had any truth behind it," adds Hastings. Sometimes it pays to lean into complementary flavors as well.

How to blend Scotch cocktails
How you choose to mix your Scotch should take into account the particular spirit that you are working with. For a good bottle of single malt Scotch, you probably want to keep the mix simple, highlighting and complementing the spirit. A run-of-the-mill blended whisky, on the other hand, does not need (nor will it necessarily benefit from) that same treatment.

Starting with the simplest, we have blended Scotch. There are excellent options out there, but many are on the lower-priced and less-exceptional side of the spectrum. This does, however, make them perfect for strongly flavored cocktails like a Penicillin, with honey, lemon, and ginger; a Mamie Taylor, which is essentially a Scotch-based mule; or the Blood and Sand, named for a silent movie and made with cherry liqueur, sweet vermouth, and orange juice.
For a bottle of single malt, spirit-forward cocktails allow Scotch to really shine. Similar to the Whisky Six previously mentioned by Thomas, Hastings suggests a whisky highball as "a superb way to appreciate the flavors of Scotch in a more approachable fashion." Other slightly more complex options include classics like the Rob Roy, a three-ingredient cocktail that's basically a Scotch-based Manhattan, or even a Scotch Old Fashioned.
Finally, there's the peatier end of the whisky spectrum. Scotch with a powerful smoky aroma can hold its own against just about anything, lending an intriguing hint of peat to many drinks. The Smoky Cokey is an elevated whisky and coke, in which the peaty spirit finds a surprising complement in that classic cola. Or you can try slipping peaty single malt into a fruity drinks, as in this raspberry Scotch sour, where smoke intertwines itself with lemon, honey, and red berry flavors to create a beguilingly delicious melange of flavors.

The number of distilleries in America right now is truly baffling. You’ve got modern and traditional producers making numerous styles of whiskey, from twists on classic bottles, such as new barrel-proof releases, to the introduction of something brand new and experimental, like Jack Daniel’s Triple Mash.
I spent years as a manager at The Whisky Shop in Manchester, where I sold and recommended thousands of bottles, tasted more than 1,000 whiskies and whiskeys, and had the chance to explore the ever-expanding world of American whiskey in real depth. These are the brands and distilleries that stood out to me most.
This list ranks what I believe to be nine of the biggest and most interesting distilleries in America, focusing on the different styles of whiskey they produce, as well as how large, available, and exciting their releases are. 9. Westward Whiskey
Westward has been at the forefront of helping to develop the American single malt market in a massive way. Between Westward and Westland, they’ve been working hard across multiple markets, mostly through whiskey festivals and large events where they can show and tell people what they’ve been producing.
Their core bottle is very solid, with a mix of styles from across the Atlantic. It follows the rules of classic single malt production, but with maturation in lightly toasted fresh American oak for that touch of domestic flavor. It’s a brand you should really get involved with if single malts are your thing, especially if you enjoy exploring those produced across the globe.

8. Jim Beam
Jim Beam is one of the largest distilleries in the world, and a company that produces so many other brands of bourbon. I can’t count how many times I’ve recommended Jim Beam and its products over the years.
Personal highlights, and bottles that many of us love, include brands like Baker’s, Booker’s, and Old Grand-Dad. Baker’s and Booker’s offer higher-proof and barrel-proof versions of that core Jim Beam style. They’re layered with rich caramel, tobacco, barrel spice, and toasted grain notes.
Old Grand-Dad is still, to this day, one of the best-value high-rye bourbons on the market. Whether you’re going after the core release or the 114 proof release, they’re just excellent whiskeys. That’s all without even mentioning the core range of Jim Beam products.
I do miss Jim Beam Single Barrel 12 Year Old. That was an outstanding bottle of bourbon, and the current Jim Beam 7 Year Old Black Label is excellent. Sadly, with so much product, I feel like Jim Beam as a brand sometimes disappears into the background as you focus on the other names, like Basil Hayden, Booker’s, or Baker’s.
7. Michter’s
Michter’s can certainly be seen as more of a boutique distillery in how it approaches its style. It has one of the lowest barrel-entry proofs in American whiskey, and it’s producing some interesting bottles outside of just bourbon and rye.
Its Sour Mash release and American Whiskey both skate the line of not quite being classic or well-known styles, but they are fun and different. Michter’s also lays claim to being one of the oldest distilleries in America.
On the more premium side of things, Michter’s has some of the oldest releases of whiskey from the American side of the market, with massive demand behind them. Its 10 Year Old bourbon and rye products would constantly sell out as soon as they hit the shelves.
A gentle, soft style of whiskey from all angles, Michter’s has certainly become a brand with a lot of positive focus on it from across the world.
6. Woodford Reserve
You could argue that Woodford Reserve is the most premium brand on this list. I know it doesn’t own other brands with long queues, huge demand, or massive secondary market value. However, the way Woodford has positioned itself among other brands has somehow created the feel of a more premium product.
That’s an odd thing to say when regular bottles of Woodford Reserve bourbon can be found for as little as £25 in the UK. However, when it comes to the Double Oaked release, the brand has picked up an even greater following thanks to that crazy, decadent flavor profile.
Then we have releases from the Master’s Collection and the brand’s wild journey through experimentation. I remember the first release coming out, and I regret not buying more of them. From Maple Wood Finish and Seasoned Oak Finish to White Corn, wine cask maturation, and Double Double Oaked releases, the lineup is insane and very exciting.
Essentially, if you want affordable and available, or really off-the-wall and fun, Woodford can do it for you, all with a nice premium feel.
5. Jack Daniel’s
So, Tennessee whiskey rather than bourbon, but nonetheless, Jack Daniel’s is huge, if not the biggest distillery in America. When it comes to Jack Daniel’s and its expansion into different territories, whether that’s beer, liqueurs, RTDs, or other lifestyle parts of the brand, it doesn’t take away from the fact that the core range contains some of the finest bottles of whiskey on the planet.
I don’t love all of them, but when you’re talking about Old No. 7, Single Barrel and its alternatives, plus the rye whiskeys, there is a lot to admire. Then there are limited-edition releases that are actually different, such as the Sinatra releases, which have always had my attention. I’m not even a huge Frank Sinatra fan, but the whiskey they named after him was pretty excellent.
Much like Woodford, its Kentucky cousin, Jack can do it all. If you want mass availability and access, there is Old No. 7, Gentleman Jack, Single Barrel, Tennessee Honey, and more. It’s all there. As soon as the brand went a little more premium and a little more geeky with barrel-proof releases and things like Sinatra, it really cut a new path for itself.
4. Four Roses
I guess you could think of Four Roses as more of a blending house. Yes, of course, it’s a distillery, but with two different mash bills and five different yeast strains, it has the ability to create ten very different styles of bourbon.
That allowance for experimentation, as well as consistency across the range of Yellow Label, Small Batch, Single Barrel, and everything else, gives Four Roses so much scope for distinct styles and different points of flavor. I love the brand for that.
The Single Barrel is a bottle I must have sold hundreds of by the time I left retail. It’s such an amazing-quality product, and each one is always a little different, but excellent.
Their limited-release bottles used to be unicorn-level hard to find. That is slightly less the case now as the flipper market has started to fall away, but they are still highly sought after for a reason.
3. Maker’s Mark
The history of modern wheated bourbon, all distilled down into a beautiful bottle with a red wax top. Maker’s Mark is a distillery that has been close to my heart for a long time.

Despite the positive spin some try to put on the situation, the whiskey industry is in a bit of a rough patch. This may or may not last, but it is what it is—people are drinking less, and some distilleries have paused production to deal with it. Distilleries making whiskey on contract for other brands, like MGP, have been pretty hard, as there is currently a glut of aged whiskey sitting in warehouses. Still, one of its brands, Penelope Bourbon, seems to have decided to ride this out by releasing a bunch of new expressions—and the latest is one that you should add to your home bar now.
Penelope was founded in 2018 by New Jersey residents Mike Paladini and Danny Polise (the brand is named after Paladini’s daughter). The label does not have its own distillery; instead, it sources nearly all of its whiskey from MGP in Indiana, although it works with Bardstown Bourbon Company for blending and bottling. In 2023, MGP acquired Penelope for more than $100 million, seemingly realizing that the company had hit a nerve in the whiskey world. Might as well own it outright and reap the benefits instead of just selling it more whiskey. In recent years, MGP has hit the brakes on whiskey production at some of the distilleries it owns, although it continues to distill in Indiana despite some dismal sales figures over the past year or two. And, as mentioned before, Penelope continues to release whiskey—some of it that doesn’t necessarily stand out, and some of it that is worth paying attention to.
This bottle, part of the new Classic Series, falls into the latter “take notice” category, despite it being a return to basics in some regards. First of all, this is Penelope’s very first large-scale straight Kentucky bourbon (there has been at least one very limited release before). That alone doesn’t make it better or worse, but it does make it different. Instead of the usual four-grain mashbill that it gets from MGP, this is a very classic three-grain recipe: 78 percent corn, 10 percent rye, and 12 percent malted barley. Where was it distilled? The brand doesn’t say, but while Bardstown Bourbon Company or its sister distillery Green River could be the source, it’s probably Lux Row in Bardstown since that is also under the MGP umbrella. There is no age statement, so that means it has to be at least four years old (and it’s probably not much older than that), and it’s bottled at a sturdy 92 proof.
Most importantly, this is a really solid bourbon that can compete with entry level bottles from Kentucky legacy names like Jim Beam, Four Roses, Wild Turkey, or Heaven Hill. All of the classic bourbon notes are there: vanilla, maple, honey, oak, black pepper, stone fruit, caramel, and peach immediately jump out. And at 92 proof, this is a whiskey you can and should use for making cocktails. An Old Fashioned or a Boulevardier are no-brainers, and if you prefer a Manhattan with less spice this will do just fine. (We should note that the Classic Series also includes an MGP-produced straight rye whiskey, another first for the brand, made with a 93 percent rye grain/seven percent malted barley mashbill, for those that like a more traditional Manhattan).
Penelope certainly didn’t have to launch another new whiskey series; it has enough cask and stave finishes, golf-themed bottles, and older Founder’s Reserve whiskeys to keep you busy for a while (too many, perhaps). Maybe the price of this whiskey was too good to pass up considering the current market; or perhaps the team really has been planning this for a long time as they say in the press release. Whatever the reason, I’m glad they bottled this Kentucky bourbon because it’s tasty, fairly priced at $45 per bottle, and versatile enough to sip or mix.

This New York spot known for fire cooking and whiskey is now open in South Miami
The latest addition to the South Miami culinary lineup comes from New York — though not the part you’re probably thinking of — bringing with it live-fire cooking and a notable whiskey program.
Flight West is the second location of a Rochester, N.Y. restaurant that opened in 2016, and, like many other culinary concepts before it, the brand came south with hopes of success.
General manager Marwan Youbi said the restaurant, which serves what it calls “New World cuisine,” is a good fit for South Florida.
“Miami has an adventurous dining community, so we felt like our concept really belonged here,” he said. “We lead with hospitality and hope to earn the same kind of support we were fortunate to receive in Rochester.”
Already home to concepts like the locally owned spots like Kitchen 57, Tokyo Tuna, Bored Cuban and Michelin-recommended Recoveco, which was named one of the best new restaurants in the U.S. in 2025, South Miami has grown recently in popularity. Residents are weary of driving to Wynwood or Miami Beach or Brickell for dinner, and Youbi said that the Flight West team has tapped into that desire.
“We love the energy of South Miami and wanted to be part of a growing community,” he said. “We kept hearing that people wanted a destination dining experience closer to home, and that’s exactly what we set out to create.”
Located at the busy intersection of U.S. 1 and Sunset Drive, Flight West aims to reflect an Art-Deco sort of elegance, with a dramatic backlit bar and red marble tabletops.
The menu was created with a little local help: chef Santiago Gomez, the force behind Cantina La Veinte, Tacology and Palo Santo, while executive chef Juan Suazo, whose career includes the kitchens of Kyu and Komodo, leads the kitchen.
The key to the restaurant is a Mibrasa charcoal oven, which uses an intense heat to bring out a certain smokiness in the menu items like whiskey-infused dry-aged ribeye or roasted chicken with a burnt chile-whiskey glaze.

Some of the popular menu items include roasted cauliflower with peanut sauce and jalapeño crema; anticucho-glazed charred octopus on smoked chickpea hummus; Alaskan King crab with a gochujang-whiskey glaze and lemon zest; and a butter-poached Maine lobster linguine with aji amarillo cream, garlic and herbs.
As you may have guessed, whiskey is the pride of the bar, which offers 350 whiskeys, bourbons, ryes and Scotches in addition to a wine and cocktail program. Run by Jeffrey Ambler, the beverage program highlights include an Old Fashioned made with Four Roses bourbon infused with plantain and finished with walnut bitters, or The Juniper, with gin and St. Germain.
In other words, expect a little theater with your drink. Aromatic smoke, infused foams and layered garnishes will all play a part. Flight West also plans to offer whiskey tastings and other guided experiences in its private dining room.
Youbi said the brand’s appreciation of great spirits is the heart of its success.
“We wanted to build a destination where the whiskey program and the kitchen work together, so you taste that connection in the food, not just in the glass,” he said.

Some bottles demand patience, and the Cù Bòcan Creation series tested mine more than most. I ordered Creation Number 3 and Number 4 roughly three years ago, swept up in the hype surrounding their release. When I first popped them open, I was underwhelmed to the point of near abandonment. So rather than trashing them outright, I let them sit, took the occasional baby pour, and waited for the day they might redeem themselves. That day has finally arrived, and the results are worth talking about.
For the uninitiated, Cù Bòcan is the peated expression from Tomatin, the same company and distillery behind the unpeated original. Plenty of distilleries play this game, from GlenAllachie with its Meikle Toir range to Springbank with Longrow.
Creation Number 3 leans on Moroccan Cabernet Sauvignon and North American rye casks. On the nose, the peat is present alongside a much sweeter profile than I remembered, with berries, plums and figs. Curiously, I could not detect any of the rye influence at all, and being familiar with both Canadian and American rye, I would never have guessed it was there.
The palate carries a genuine smoke, followed by a licorice note that sits somewhere between strawberry and black licorice, with an almost tarry edge. It has improved dramatically, but it took far too long to get there.
Creation Number 4, matured in tawny port and cognac casks, is the one that won me over. The tawny port now sings, delivering cooked-down fruit, plum jam, glazed cherry and spiced chocolate. There is honey and a touch of apricot on the nose, and less peat than its sibling, though a pleasant smokiness does creep onto the palate.
Neither has much viscosity, but both are approachable and would make excellent summer drams. There is something faintly Christmassy about Number 3 that I cannot quite embrace, whereas Number 4 simply feels more balanced and enjoyable.

Here is my final word. If I had scored these on opening day, both would have languished in the low 70s. Today, Creation Number 3 sits around 81 and Number 4 earns an 84. Enjoyable scores, but both fall shy of my 85 buy threshold.
At roughly $90, there is simply too much great whisky out there to justify a repeat purchase. If you own these and want a shortcut, decant them and pour them back into the bottle to accelerate the opening process. My hope now rests with the 12 and 15 year expressions, which I suspect may be the better drams. Have you given the Cù Bòcan Creation series enough time to open up?

Forget Drinking Scotch Whisky Neat — Why Mixers Aren't Off-Limits
Scotch whisky, more than any other spirit, is likely to end up in a glass all on its own. There is an unwritten rule that a dram of whisky ought to be taken room temperature and straight from the bottle, with perhaps a scant few drops of water added to soften the burn and reveal deeper complexity. While this practice gives a purer tasting experience for those who want to really explore an exceptional bottle, Scotch does also make an excellent cocktail. To debunk this common Scotch whisky myth — among others — Tasting Table's James Hastings, a former cocktail bartender, sat down with Annabel Thomas, founder and CEO of Nc'nean, a distillery on the west coast of Scotland.
"While many Scotch enthusiasts prefer their whisky neat," Thomas says, "there's no hard rule." This shows up at the Nc'nean distillery, where the brand's whiskies are mixed freely and well. The simplest of the cocktails served there is the Whisky Six, a Scotch and soda tipple featuring two parts Nc'nean to four parts soda water, with a sprig of mint to garnish the drink. Just like adding a splash of water to a glass of neat Scotch, Thomas explains that the soda softens and opens up the flavor of the whisky, increasing the perception of a wider array of flavor compounds.
Even with a good bottle of Scotch, however, there is more to mixing than just opening up the spirit. "I can attest that there are plenty of superb Scotch-based cocktails out there that wouldn't exist if this particular myth had any truth behind it," adds Hastings. Sometimes it pays to lean into complementary flavors as well.
How to blend Scotch cocktails
How you choose to mix your Scotch should take into account the particular spirit that you are working with. For a good bottle of single malt Scotch, you probably want to keep the mix simple, highlighting and complementing the spirit. A run-of-the-mill blended whisky, on the other hand, does not need (nor will it necessarily benefit from) that same treatment.
Starting with the simplest, we have blended Scotch. There are excellent options out there, but many are on the lower-priced and less-exceptional side of the spectrum. This does, however, make them perfect for strongly flavored cocktails like a Penicillin, with honey, lemon, and ginger; a Mamie Taylor, which is essentially a Scotch-based mule; or the Blood and Sand, named for a silent movie and made with cherry liqueur, sweet vermouth, and orange juice.
For a bottle of single malt, spirit-forward cocktails allow Scotch to really shine. Similar to the Whisky Six previously mentioned by Thomas, Hastings suggests a whisky highball as "a superb way to appreciate the flavors of Scotch in a more approachable fashion." Other slightly more complex options include classics like the Rob Roy, a three-ingredient cocktail that's basically a Scotch-based Manhattan, or even a Scotch Old Fashioned.
Finally, there's the peatier end of the whisky spectrum. Scotch with a powerful smoky aroma can hold its own against just about anything, lending an intriguing hint of peat to many drinks.
